Vegan Peanut Butter Balls

I recently came across these peanut butter balls, and they make the ideal snack for this time of year! With the arrival of spring, many of us are looking for nutritious yet satisfying snacks that can keep our energy levels up during the busy days filled with outdoor activities and family gatherings. These peanut butter balls not only provide a delicious taste but also pack a punch of protein and healthy fats, making them a perfect choice for a quick pick-me-up.


One of the most fun aspects of these treats is their versatility in presentation. You might even consider molding the vegan peanut butter balls into playful "eggs" for an Easter gathering. In addition to their appealing appearance, these peanut butter balls are incredibly easy to make. The base typically consists of just a few simple ingredients, and you can also customize them by adding ingredients like chia seeds, flaxseeds, or even dark chocolate chips to enhance the flavor and nutritional value.


Vegan Peanut Butter Balls

1/2 cup peanut butter

1/4 cup maple syrup

1/2 Tbsp coconut oil (melted)

2 cups semi-sweet chocolate chips/chunks (non-dairy)

 

In a microwave-safe bowl, melt the coconut oil.

Mix the peanut butter, maple syrup, and melted coconut oil.

Freeze the mixture for 30 minutes.

Form the mixture into small balls and freeze for 2 hours or overnight.

Melt the chocolate chips, dip the frozen balls into the chocolate, and add sea salt to the tops.

Freeze for at least 1 hour and serve.


The peanut butter balls can be stored in the freezer for up to 2 months or refrigerator for up to a week.  They are so good though, they won't last that long!
