Lemon Ginger Bliss Balls

These nutritious snacks combine the natural sweetness of raw cashews and honey with the tropical essence of shredded coconut. The addition of grated ginger and fresh lemon zest adds a refreshing and spicy kick, while a hint of vanilla extract rounds out the flavors. 

Ingredients:

·       1 cup raw cashews

·       1 cup unsweetened coconut

·       2 Tbsp. honey

·       1 1/2 tsp. grated ginger

·       1/4 tsp. vanilla extract

·       1 lemon zested and juiced

Instructions:

Pulse all the ingredients in a food processor, shape into bite-sized balls, and roll them in shredded coconut for extra texture. Store these bliss balls in an airtight container in the fridge for up to a week, and enjoy a burst of energy and flavor whenever you need a quick and healthy snack.
